Annabel Karmel’s Sticky Chicken Skewers Recipe

Annabel Karmel’s Sticky Chicken Skewers Recipe

Chicken is a healthy option and popular with children. These sticky skewers taste lovely and are great party finger food – but watch out, you can get sticky fingers! Serve arranged on a large platter or pop into party food boxes with some potato wedges and cherry tomatoes.

Sticky Chicken Skewers Recipe

  • 150g / 51/2 ox skinless, boneless chicken breast, cut into 2cm cubes
  • 3 tbsp pineapple juice
  • 1 tbsp soft light brown sugar
  • 1/2 tsp soy sauce
  • You’ll also need four wooden skewers, soaked in warm water for 20 minutes

  1. Mix the pineapple juice, sugar and soy sauce together in a medium bowl.
  2. Add the chicken, cover and marinate for two hours or overnight in the refrigerator.
  3. Preheat the grill to high. Thread the chicken onto the skewers, reserving the marinade, and place on a foil-lined grill pan. Grill for three to four minutes each side, watching carefully.
  4. Put the reserved marinade in a small saucepan and bring to the boil. Boil hard for three to four minutes until thick and syrupy. Brush over the cooked chicken, then cool the chicken and refrigerate until needed.

  1. I have been making this recipe for quite a while but also put pineapple chunks and green peppers on the skewers! Delicious!

  2. Looks great! When making kabobs I like to use two skewers each; it makes it easier when grilling as the meat tends to twist around on one skewer
