Foodie Friday – Upside Down Banana Cake Recipe

Upside Down Banana Cake Recipe


  • 1 small banana, sliced into ½-inch coins
  • 5 tablespoons butter, divided use, plus more for the pan
  • 3 tablespoons light brown sugar
  • 2 tablespoons + 2 teaspoon sugar
  • ½ teaspoon vanilla extract
  • ¼ teaspoon almond extract (optional)
  • 1 large egg
  • ½ cup flour
  • ⅛ teaspoon salt
  • ¾ teaspoon baking powder
  • ⅓ cup milk


Preheat the oven to 350°F and line the bottom of a 6-inch round cake pan with a circle of parchment paper.

Butter the sides of the pan, too.

Place the banana slices in a concentric circle in thebottom of the pan.

In a small bowl, combine 2 tablespoons of the butter and the brown sugar. Microwave on HIGH until melted and bubbling, about 40 seconds. Pour this mixture evenly over the bananas in the pan.

Next, using an electric mixer on medium speed, beattogether the remaining 3 tablespoons of butter with the sugar, about 30 seconds.

Add the egg, vanilla, and almond extract (if using) and beat until combined.

Sprinkle the flour, salt, and baking powder evenly over the batter. Beat to combine.

Finally, quickly beat in the milk.

Pour the batter over the bananas in the pan.

Bake for 30 minutes, or until the cake is starting to turn golden brown on the top and a toothpick inserted about halfway comes out clean. The cake will also start to pull away from the edges of the pan and you’ll hear the bananas simmering.

Let the cake cool for 10 minutes, invert, and serve.
