Recipe: Vanilla Cupcakes

Joanna from Vintage Venues shares the recipe to these yummy vanilla cupcakes that are perfect for any occasion! Finish off with sprinkles and even a cute unicorn topper for an adorable unicorn party!

For the cake mix:

  • 170g soft margarine
  • 170g caster sugar
  • 170g self-raising flour
  • 3 eggs
  • 1 teaspoon vanilla essence

For the vanilla frosting:

  • 85g soft margarine
  • 250 g icing sugar
  • 1 teaspoon vanilla essence


Cake mix:

  1. Mix all together using an electric mixer.
  2. Bake for 15-20 mins at 180 degrees fan oven until springy to the touch.

Vanilla frosting:

  1. Add a splash of milk to get mixture to your desired consistency.
  2. Mix all together using electric mixer, pipe or spoon onto top of cupcakes once they are cool.
  3. Add sprinkles or topping of your choice.
  4. Enjoy.
