In the current Indian summer, it seems only proper to enjoy the weather, and this is a great drink to kick off any evening or weekend with. Watermelon is quite the deceptive beast; in giant wedges it makes a great, albeit messy snack, and when blended turns into a fabulous bright pink juice! The grapefruit adds sour, citrus-y flavours with a really gentle warmth from the ginger, but above all it’s very refreshing! It’s great for kids just as it is, or adults can kick it up a notch by adding a slug of vodka to the serving jug!
- Watermelon. ½
- Grapefruit. 1
- Fresh ginger. 1 inch chunk
- Cut the watermelon half into wedges, then remove the flesh, chop into chunks and add to a food processor or blender.
- Squeeze in the juice from the grapefruit, then finely grate the ginger onto your chopping board. Scrape off any excess ginger from the grater, gather up in your hand, and squeeze all the juice into the blender. Discard the pulp.
- Blend it all together until nice and smooth, then pour into a jug (with some vodka if you fancy), and enjoy!
